I finally got a chance to experiment with a new flavor of cupcake. I started with a white cake used coconut milk, crushed pinapple, and coconut rum for liquid and added a bit of lime after a taste. When they were done I put a dollop of whipped cream with a bit of coconut rum and lime. I was very pleased with them and so was the birthday girl, Heather Alger. All in all a nice day at The Lake.
